Picked and processed within 24 hours. The processing takes place at high revolutions in the oil mill to enhance the bitterness and spice of the oil. The granulation is carried out at low temperature for about 10 minutes in order to avoid overheating. When the oil is in the centrifuge and in separation it goes through very rapid steps to safeguard the temperature.
Ideal with warm toasted bread and, in winter, with bean and corn soups.
